I don’t usually post recipes or create ones myself…it’s just not my interest. However, today I created a recipe and it turned out so yummy I had to share it. It’s also quite healthy and pretty easy to make.
Turkey Stuffed Bellpepper
Ingredients:
Four large bellpeppers
Pack of lean ground turkey
Jar of Four Cheese Alfredo Sauce
2 cups Monterey Jack Cheese shredded
Green onions (half cup chopped)
Garlic Salt
Salt and Pepper
Coconut Oil
1 cup white rice (optional)
Directions
Take tops off of bellpeppers and clean inside and out. In a pan, use a little coconut oil to fry up the ground turkey. When it is cooked, add in the four cheese sauce and green onions. Also add garlic salt, salt and pepper to taste.If you are using rice (which is optional), you can use the whole jar of sauce. If not, three quarters of the jar should be plenty and keep it from getting too runny.
Preheat oven to 350 degrees
If you are using rice (I did not to cut back on carbohydrate count), cook the rice separately as per directions and then add to the sauce/meat when it’s finished. This is also the time to add cheese. You can either mix the cheese into the sauce, or you can layer the cheese in the bellpepper as you are stuffing. That is what I did.
Add some cheese on bottom of bellpepper, then some of the sauce/meat mixture, another layer of cheese and another layer of mixture. Top with cheese (doesn’t take much). Pop them in the oven for about 40-45 minutes, depending on how soft you like your bellpeppers. (I prefer them a bit on the crunchy side)
This makes 4 services. Perfect for a healthy, light lunch or dinner. Enjoy!
